The chef heads towards Louisiana's swamplands, where he ditches his car for a high-speed boat. Then, he travels to the nearby city of Lafayette, where he visits the family run smokehouse, Johnson's Boucaniere, and samples some of their traditional homemade sausage. James also tries ice cream from the legendary Borden's ice cream parlour, before heading back to the swamps to cook one final dish
