Ainsley's Mediterranean Cookbook
Sardinia - Siniscola and Oliena
Season 1 Episode 4 of 10
Ainsley Harriott's tour of Sardinia continues in the Nuoro region, where his guide Claudio takes him to meet his parents, who run a small bakery specialising in pane carasau, a thin crispy bread found all over the island. Claudio then takes the chef to his family's citrus farm to discover local fruit the pompia, a citrus so bitter it is never eaten raw but makes a fabulous liqueur. Moving up to the hills, Ainsley cooks a traditional sheep stew with a group of shepherds, visits one of the island's ancient archaeological sites and cooks up a Sardinian-style minestrone
Ainsley's Mediterranean Cookbook airs on ITVBe +1 at 9:00 PM, Thursday 28 November. (Subtitles.)
