The five remaining bakers tackle patisserie in the quarter-finals, making 24 cream horns for their signature challenge, before creating mokatines for Mary's technical bake. For the showstopper, the cooks are challenged to make a religieuse à l'ancienne - three tiers of choux pastry eclairs filled with creme patissiere and decorated with icing and buttercream. The contestants must produce something that not only looks and tastes good, but also stays standing before judges Mary and Paul cast a critical eye over their efforts.
