The chef heads towards Louisiana's swamplands, where he ditches his car for a high-speed boat. He travels to the nearby city of Lafayette, where he visits the family run smokehouse Johnson's Boucaniere, and samples some of their traditional home-made sausage. James also tries ice cream from the famous Borden's ice cream parlour, before heading back to the swamps to cook one final dish
