The next leg of James's trip sees him heading to Bresse, home of one of the country's most famous ingredients - the Bresse chicken. He visits a poultry farm to discover just why these birds are so special, and gets the chance to cook his own. Moving on, he meets Georges Blanc, owner of a three-Michelin-starred restaurant - and one of James's culinary heroes
