He is confident in his locally sourced gastro menu and delivers a meal with plenty of flair, but faces the challenge of impressing foodie Nicky. He is also under pressure to convince American Peggy of the merits of the region's food, while his fellow Lancastrians Valerie and Steve are keen to see how the area has influenced his cooking
