The chef goes on a culinary tour of Australia, which he fell in love with on his first visit at the age of 19 and where he now spends part of the year at his home in Mollymook, New South Wales. At Botany Bay - the site of James Cook's first landing - he does some foraging and learns the art of cooking the Aboriginal way, before heading to the state of Tasmania. There he goes hunting for wallaby, samples one of the best single malt whiskies in the world and tastes sustainably farmed salmon that has become a national obsession
