Gino D'Acampo visits a bakery in Altamura, Puglia, where he tries to shape one of the town's distinctive loaves, before travelling to Matera, Basilicata, to sample food traditionally eaten by the poor and rustle up an Italian version of beans on toast. Back in Puglia, the chef explores the tourist haven of Alberobello, taking in its fairy-tale atmosphere and demonstrating how to stuff a rustic loaf with salami, piquant cheese and grilled vegetables
