He heads to a farm where a local cheese, caciocavallo, is still made the same way it has been for centuries. Moving on, he visits Polignano a Mare, a town that teeters 20m above the sea on a maze of caves. It has become the international home of cliff diving - is Gino brave enough to make the jump?
